Cook it until about 80 per cent tender, then layer with half-cooked rice, mint and ghee. Seal and steam on very low heat for 40 minutes. The meat should be soft and the rice full of flavour.
3. Ilish Biryani
This Bengali special suits monsoon-style weekends. Marinate 500 g ilish (hilsa) steaks with turmeric, green chilli paste, salt and mustard oil, then fry lightly. Layer them gently over half-cooked rice with fried onions, a few drops of kewra water and a spoon of ghee. Steam for just 15 minutes. Handle the fish carefully, as it has many fine bones.

4. Prawn Biryani
Marinate 500 g medium prawns with turmeric, chilli and lemon juice for 20 minutes. Make a masala of onion, tomato, curd and spices, then add the prawns. Prawns cook fast, so layer them with rice and steam for only 15 minutes. Longer cooking makes them rubbery.

A quick option for busy days. Boil six eggs, make small slits and fry them lightly with turmeric and chilli. Cook a thick tomato-curd masala, add the eggs, then layer with rice. Steam for 20 minutes. Garnish with fried onions and coriander.
6. Vegetable Biryani
Use carrot, beans, peas, cauliflower and potato. Marinate the vegetables in curd, ginger-garlic paste and biryani masala for 30 minutes. Layer with rice, mint and saffron milk, then steam for 20 minutes. Cut the vegetables into similar sizes so they cook evenly.
7. Beef Biryani
Beef is a favourite for big weekend gatherings. Marinate 700 g beef with curd, raw papaya paste, ginger-garlic paste, red chilli powder, garam masala and salt for at least four hours, or overnight. Cook the beef with fried onions and whole spices until it is nearly tender. A pressure cooker saves time, and about 25 minutes usually works. Layer the beef with half-cooked rice, mint, saffron milk and ghee. Seal the pot and steam on low heat for 30 minutes. Serve hot with borhani or raita.
